Have you guys tried sweet potato toast yet?  Essentially, the idea behind this foodie trend is that you cut slices of sweet potato and toast them up in a toaster, toaster oven, or regular oven as you would sliced bread. To find out just how idiot-proof it is, I tried it myself.  The verdict?

Why have I not been doing this forever?

While this is divine with good old orange sweet potatoes, I decided to play around with a few different types. My favorite was when I used murasaki sweet potato, a variety with a gorgeous purple skin, cream-colored flesh, and dreamy nutty flavor. Yes, I said “dreamy.” You can also use a white potato for a more savory twist. For the record, I feel like white potatoes are so misunderstood, mostly because of all the ways we’ve found to mess with them, frying them and mashing them and scalloping them into unhealthful mutations. Really, though, white potatoes are packed with filling fiber plus potassium, an important mineral that’s key for muscle and nerve function. As with pretty much anything, it’s all about what we do with it that determines whether it’s “good” or “bad.”

 

But I digress. Sweet potatoes are still my pick because of their higher antioxidant activity, lower glycemic load, and let’s not forget that taste. Honestly, though, when you enjoy them in a healthy, balanced context, they’re all good.

And delicious! I cannot stress how easy this was. I usually set my toaster to a low setting because I have a tendency to overdo it when applying heat (#sagittariusproblems), so this only took me a few rounds on the second-lowest level. To get it to cook even more quickly, you can slice your potato even more thin. Also, you get more pieces that way, so if you’re looking for something that will take you longer to eat, more slices looks like more on the plate, even if it is still the same size potato.

Though you could eat your sweet potato toast as is, to make it more filling, you add a spread of coconut oil or nut butter, or try topping it with sliced avocado, an egg—whatever does it for you. Enjoy!

Ingredients:

  • 1 sweet potato, sliced thin

Directions:

  1. Place sweet potato slices in a toaster, toaster oven, or conventional oven.
  2. Toast until soft inside and crispy outside.

To serve, top with desired toppings.
