Good morning and happy Friday! Just popping in with some quick announcements and a tasty recipe!

First up, with 2017 around the corner it’s a great time to think about your health goals for the coming year and plan it out. In addition to opening up some more time for private nutrition sessions, I’m excited to share that I’m now seeing clients via Nutrimedy, an online platform that makes it super-easy to connect with a dietitian through video chats, messaging, and meal journal reviews. For New York State residents looking to book an appointment, my Nutrimedy ID is 10064.

So, who’s hungry for breakfast? If you’re still going through your pumpkin stash, you’ll love this Pumpkin Pie Green Smoothie recipe I created for Azumio. I’ve been loving this as a smoothie bowl lately with a drizzle of coconut oil and chia seeds on top.

Ingredients:

  • 1 cup water or (unsweetened) milk of choice
  • ½ cup pumpkin puree
  • ½ a medium frozen banana
  • 1 scoop vanilla protein powder (optional)
  • 1 teaspoon pumpkin pie spice
  • ¼ teaspoon vanilla extract
  • 1 cup ice
  • 1 large handful baby spinach

Directions:

Layer ingredients in a blender. Blend on high until smooth. Enjoy straight up or to make into a smoothie bowl, pour into a bowl and top with chia seeds, coconut flakes, or nuts.

What’s your favorite way to use up pumpkin?
