For those of you celebrating today, Merry Christmas! I’m spending the day with my family but wanted to pop in and share a quick last-minute recipe with you guys.

As someone who sort of falls under the “food blogger” category, I feel a weird pressure to make a big fuss about the holidays. The reality is that the holidays involve a lot of stress and anxiety in my world, but having some healthy go-to’s in my back pocket keep me grounded. Basic self-care like meal-prep to make it easy to assemble healthy meals lightens my load a lot. Continuing to enjoy regular exercise and being more flexible when I need to mix up the times of day and types of workouts helps too—endorphins are magic. Another of my holiday essentials is coffee. It’s one of my great loves, and I fully admit to being addicted. Without this legal addictive stimulant in my morning mug, I’m just no fun to be around, much less productive enough to deck any halls.

Just when I thought I was going to lose it, Christmas came a little early this year, thanks to KRUPS.

I also love surrounding myself with pretty lights and flowers to brighten those winter days. I am all about the beautiful red and white blooms we see this time of year. And I love pink flowers anytime of year. They’re a good reminder to slow down and savor the moment. Mixed success, but trying and failing is better than not trying!

When it comes to holiday recipes, simplicity is key. There are going to be some things where it makes time into invest time and energy to create something beautiful, but look for places you can streamline.

A wholesome, delicious dessert starts with wholesome delicious ingredients. Stonyfield is my go-to for making healthy recipes a no-brainer. I use Greek yogurt in so many different sweet and savory recipes. Aside from being delicious on its own, I also love yogurt as a substitute for other things like mayo and sour cream. It’s even delicious in baked goods when you want to go easy on butter but still enjoy a rich taste.

This is pretty much the easiest dessert ever. It’s perfect for a last-minute holiday dish if you’re anything like me and are, like, “Whoops! I forgot to make time to even think about a festive treat!”

Stonyfield Cheesecake Dip

If you don’t have any coconut flour, don’t knock yourself out. I mean, come on, you’re giving your guests something sweet and creamy to snack on-how is that bad? Cocoa powder makes a great add-in for deepening the flavor and giving this a rich, fluffy texture.

Greek Yogurt Cheesecake Dip

Ingredients:

  • 1 cup plain Greek yogurt
  • 1 cup cottage cheese
  • 2 tablespoons coconut flour
  • Stevia or other sweetener to taste
  • 1 teaspoon vanilla extract

Directions:

  1. Blend ingredients in a food processor until smooth.

Serve with berries or a slightly sweet cracker like graham crackers. This also makes a delicious toast topper and is delicious on pancakes or waffles the next day.

~Makes about 2 cups.
